Saffron contains an impressive variety of plant compounds. These act as antioxidants, molecules that protect your cells against free radicals and oxidative stress. Important saffron antioxidants include:

  • Crocin

  • Crocetin

  • Safranal

  • Kaempferol Both crocin and crocetin are carotenoid pigments responsible for saffron's red color. Both compounds can:

  • Have antidepressant properties

  • Protect brain cells from progressive damage

  • Heal inflammation

  • Reduce appetite

  • Assist in weight loss Safranal gives saffron its unique taste and aroma. Research suggests it may help improve your mood, memory, and learning ability, as well as protect your brain cells from oxidative stress. Finally, kaempferol is found in the petals of the saffron flower. This compound has been associated with health benefits such as reduced inflammation, anti-cancer properties, and antidepressant activity.

Saffron is called the sunshine spice. This is not just because of its different color but also because it may help brighten your mood.

In a review of five studies, saffron supplements were significantly more effective than placebos in treating mild to moderate depression symptoms. Other studies found that taking 30 mg of saffron daily was as effective as traditional treatments for depression such as Fluoxetine, Imipramine, and Citalopram. Additionally, fewer people experienced side effects from saffron compared to other treatments. Both saffron petals and thread-like stigma appear to be effective against mild to moderate depression. While these findings are promising, more participants and longer human studies are needed before experts recommend saffron for depression treatment.

Saffron is high in antioxidants that help neutralize harmful free radicals. Free radical damage has been linked to chronic diseases such as cancer. In vitro studies have shown that saffron and its compounds selectively kill colon cancer cells or suppress their growth without harming healthy cells. This effect also applies to other cancer cells such as those of the skin, bone marrow, prostate, lungs, breasts, cervix, and others. In vitro studies have also found that crocin, the main antioxidant in saffron, may make cancer cells more sensitive to chemotherapy drugs. While the findings from in vitro studies are promising, saffron's anti-cancer effects have not been sufficiently studied in humans, and more research is needed.

Snacking is a common habit that can lead to weight gain. Research suggests that saffron may help prevent snacking by reducing your appetite. In an 8-week study, women taking saffron supplements felt significantly fuller, snacked less, and lost significantly more weight compared to women in the placebo group. In another 8-week study, taking saffron extract supplements helped significantly reduce appetite, body mass index, waist circumference, and total fat mass. However, scientists are not sure how saffron reduces appetite and helps with weight loss. One theory is that saffron elevates your mood, which in turn reduces your cravings.

Saffron has been associated with other health benefits that have not been extensively studied yet:

  • It may reduce risk factors for heart disease: Animal and in vitro studies suggest that saffron's antioxidant properties may lower blood cholesterol levels and prevent clogging of blood vessels and arteries.

  • It may lower blood sugar levels: In vitro studies and studies in diabetic mice suggest that saffron may lower blood sugar levels and increase insulin sensitivity.

  • It may improve vision in adults with age-related macular degeneration (AMD): Saffron improves vision and protects against free radical damage associated with AMD.

  • It may improve memory in adults with Alzheimer's disease: Saffron's antioxidant properties may improve cognition in adults with Alzheimer's disease.
